Short Rib Ravioli
Our fresh pasta is made in accordance with our passed down family recipe and Italian culinary law. We use only durum flour, semolina flour and fresh eggs - no soft or all purpose flours are used. Our flour is direct from North Dakota and is exclusively grown once a year. The wheat we use is from the center of the chaff which results in higher protein, a better nutty flavor, and a low Glycemic index (fresh pasta breaks down slower in your system resulting in no glucose build up). Bottom line - more energy and no starch build up. Additionally, all our pasta is mixed in small consistent batches, proofed, hand laminated and cut.
