Our products are made according to our traditional family recipe and Italian culinary law. We use only durum flour, semolina flour, and fresh eggs—no soft or all-purpose flours are used. Our flour is sourced directly from North Dakota and is harvested once a year. The wheat we select is from the heart of the chaff, which results in higher protein content, a richer nutty flavor, and a low Glycemic index (since fresh pasta breaks down more slowly in your system, preventing glucose buildup). Ultimately, this means more energy and less starch buildup. Additionally, all our pasta is blended in small, consistent batches, proofed, hand laminated, and cut.
